Flex sensor

I was trying to describe this device in a post some time ago. Finally found it again. Interesting strip that changes resistance as you bend it. It was originally designed to make the computer glove devices to simulate hand movements.

It would be dependent upon the amount of movement (bend), but not the pressure. I do not think it would make a good one.

However, if you are looking for something similar that is for pressure, here is a link to a sensor named "flexiforce".
